Gastronomers are in for a treat at this year’s Madrid Fusion Manila

Let gastronomy takes center stage on April for the Madrid Fusion Manila 2018. This exciting international gastronomy congress with the theme of “Innovating Tradition” is happening on April 19 to 21 at the SMX Convention Center, Pasay City.

Wanda Tulfo-Teo, Secretary of Department of Tourism (DOT) together with DOT Undersecretary Benito Bengzon Jr., Lourdes Plana of Foro de Debate, Iñigo Iribarnegaray of Vocento officially signed the Agreement for MFM 2018 during the MFM 2017 Appreciation Gathering held last week at the Manila Peninsula in Makati City.

This year’s Madrid Fusion Manila aims to highlight traditional cooking techniques and native ingredients, thus the theme “Innovating City.”

In an interview last year with the DOT Secretary, she said, “The chefs of today’s world are now going back to their roots looking into their pantries and discovering what is available in their own locales – produce ingredients, forgotten or age-old techniques, making them new and responsive to our time.”


List of Presenters for Madrid Fusion Manila 2018

  • Iñigo Lavado of Restaurant Singular

Hailing from Irun, Spain, Lavado is trained under both chefs Alain Ducasse and Ferran Adria thus honing skills in both traditional French cooking methods and molecular gastronomy. His restaurant offers exotic flavors from different corners of the world.

  • Diego Gallegos

Better known as “the caviar chef,” whose restaurant Sollo in Malaga, Spain, has one Michelin star. He creates new concepts via innovative processes, using only regional the highest quality raw materials in his creations.

  • Pepe Solla of Michelin-starred Casa Solla in Pontevedra, Spain

Solla is recognized at the Atlantic Arc Festival in 2013 as the Best Chef of Galicia. Pepe grew up watching his parents cook since he was a kid. He defines his cooking style as an extension of his memories in Galicia, his homeland. With this in mind no wonder that the sea acquires a leading role in many of his recipes.

  • Javier Estevez of La Tasqueria in Madrid

Estevez received the Chef Revelacion award at Madrid Fusion 2016. Behind Estevez’ young face lies a skilled chef with years training which reflected in all his creation.

  • Roberto Ruiz of Punto MX in Madrid

Aside from having a first Michelin star last year, Punto MX have also retained two Repsol soles for much longer. As a result, he becomes the first Mexican restaurant in Europe to achieve those qualifications.

There are two James Beard awardees arriving from the United States. One of them is proudly Filipino: Curtis Duffy of three Michelin-starred Grace in Chicago, Illinois. He was recognized as Best Chef, Great Lakes at the 2016 James Beard Foundation Awards. The other is Paul Qui of Kuneho in Austin, Texas, who won in the reality cooking show Top Chef and who was named Best Chef, Southwest by the James Beard Foundation in 2012.

This 2018 may also see the most diverse representation of speakers from Asia: From Japan, Hajime Yoneda of two Michelin-starred Hajime in Osaka, Japan; from Hong Kong, Matt Abergel of hipster favorite Ronin; From Korea, Mingoo Kang of one Michelin-starred Mingles in Seoul (ranked No. 15 in Asia’s 50 Best Restaurants 2017); from Singapore, LG Han of Labyrinth, which just recently earned a Michelin, and Spanish-Australian Aitor Jeronimo Orive of Iggy’s, for years considered Singapore’s best restaurant.

Madrid Fusión Manila (MFM) is the first and only Asian edition of Madrid Fusión, the most important gastronomy event in the world, celebrated annually in Madrid, Spain since 2003.
